Pineapple cake recipe | Pineapple loaf cake | Pineapple cake in oven


     Cake baking has no restrictions, in the basic cake recipe you can actually incorporate whatever flavor you want. I had a pineapple essence lying around on fridge, so I wanted to make a pineapple flavored cake. This cake is actually a modified version of the normal vanilla sponge cake recipe. So, you can call it as pineapple flavored sponge cake or pineapple loaf cake.


     To give this cake a rich pineapple flavor, I have used pineapple essence instead of vanilla extract which we generally use in cakes and I have also added some store-bought pineapple juice. You can also use fresh juice here if you're adding pineapple essence / extract since fresh pineapple juice won't add much flavor when it's added alone. If you're not using pineapple essence / extract use your favorite brand of store-bought pineapple juice.


     Generally for cakes, milk, water or any other liquid ingredient is added. Here I have used pineapple juice as a milk / water substituent. These kind of substituents will incorporate the desired flavor in your cake.


     If you like adding pineapple chunks, you can add that. Serve this cake with a scoop of vanilla ice cream, it tastes delicious. I sprinkled some tutti frutti on top to make it more colorful. You can even use chopped dry fruits and nuts.

Pineapple flavored yellow sponge cake recipe made with pineapple essence and some pineapple juice.

Ingredients
  • 2 Eggs
  • 3/4 - 1 cup granulated Sugar
  • 1 tsp Pineapple essence / Pineapple extract
  • 1 & 1/4 cup All purpose flour / Maida
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 6 tbsp. Pineapple juice
  • A few drops Yellow food colour (optional)
  • 1/2 cup of Oil (any flavorless oil) + 1 or 2 tsp to grease the pan
  • Tutti frutti (optional)

Instructions
  • Beat egg whites until it becomes fluffy and fold in the egg yellow and sugar.
  • Beat well and add in the pineapple essence.
  • Sieve the flour, baking powder and salt and fold it gently.
  • Add in the pineapple juice and oil.
  • Mix well until it's well combined.
  • Grease the baking tin and pour in the batter.
  • Bake the cake in a preheated oven of 160°C for 35 to 40 minutes.
  • Let it cool for some time and serve it!

    Recipe notes
    You can even beat the eggs without separating the egg whites as I have shown in the recipe Orange loaf cake.
    Insert a toothpick and check whether the cake baked well or not. Bake it till the toothpick comes out clean.




















    Pineapple loaf cake - Step by step pictures

    In a wide bowl, add in the egg whites.


    Beat until fluffy (for about 2 to 3 minutes).



    Fold in the egg yellow.



    Now add in the sugar.


    Beat well for about 1 minute.




    Add in 1 tsp of pineapple essence.



    Seive the flour, baking powder and salt.



    Fold in gently.


    Now add in the pineapple juice with few drops of yellow food colour (if needed).


    Fold in gently.


    Add in the oil. (You can use any flavorless oil)


    Fold in gently.


    Cake batter is ready!


    Grease the baking tin with oil / melted butter.


    Line the tin with baking sheet / parchment paper and apply some more oil / butter on top.


    Pour in the batter.



    Tap it twice or thrice to remove air bubbles.


    Now sprinkle some Tutti Frutti on top.


    Bake the cake in a preheated oven of 160°C for 35 to 40 minutes.
