Egg Paratha | Anda paratha | Egg stuffed paratha | Healthy vegetable and egg paratha
Egg paratha is made in a lot of ways, the usual street style Mughlai egg stuffed paratha recipe is quite complicated. Egg should be cooked inside the paratha layers, so you have to pour the beaten egg inside the two layers of paratha while it's getting cooked. While the way I make it is so easy, roll out two thin rotis, cook them slightly on both sides, spread the beaten egg on top of one roti and place another one on top. This is how simple it is!
It's one of the quick and tasty recipes for beginners to try out. I always make this recipe for myself whenever my mom cook recipes that I don't like. If you have paratha dough ready, you can make this recipe in no time and it's a yummy lunch box recipe!
It's a healthy as well as a filling paratha recipe since it's made with whole wheat flour and it has lots of veggies in it. You can always use your favorite vegetables like cauliflower, broccoli, beans, beetroot etc. You can even use mushrooms. Chop the vegetables finely and sauté them with some salt and pepper before adding.
A simple egg paratha recipe with lots of healthy veggies in it. It's so easy to cook and it tastes delicious.
Ingredients
- 5 - 6 tsp Oil or Butter
- 1 medium sized Onion (chopped)
- 1 or 2 medium sized Carrot (chopped)
- 1/4 cup Cabbage (chopped)
- 1/4 cup Bell pepper / Capsicum (chopped)
- Salt as required
- 1/4 - 1/2 tsp ground Black pepper powder or Red chili powder
- 2 Eggs
- Roti / chapati dough (prepared from 1 cup of Whole wheat flour)
Instructions
- Add some oil in a fry pan and sauté all the veggies.
- Sprinkle some salt and black pepper powder. Mix well.
- Now take the vegetable mixture in a bowl and crack in 2 eggs.
- Beat well and keep it aside.
- Take few dough balls and roll them with a rolling pin (in the same way as we do for chapati / roti)
- In a pan, slightly cook the rolled out dough for few seconds on both sides and keep them aside.
- In the same pan, heat some oil on a low flame and place a slightly cooked roti on it.
- Spread some egg mixture on top with a spoon.
- Immediately place another slightly cooked roti on top.
- Cook it well on both sides and serve it with ketchup.

Recipe notes
With 1 egg you can make 2 medium sized parathas.Don't over fill the mixture.
You can actually use any other veggies that you like or you can even skip adding veggies.
Egg stuffed paratha - Step by step pictures
In a pan, add some oil and sauté the chopped onion for about 1 minute.
Add in the chopped cabbage and carrots.
Sauté them for about 2 minutes.
Then add in the chopped bell pepper.
Sauté for about 1 minute.
Now add in some salt, black pepper powder / red chilli powder.
Mix well.
Now take the sautéed veggies in a bowl and crack in two whole eggs.
Beat well and keep it aside.
Roti / chapati dough prepared with whole wheat flour. You can freshly knead it for this recipe or you can use the leftover dough.
Take few dough balls and roll them with a rolling pin (in the same way as we do for chapati / roti).
In a pan, slightly cook the rolled out dough for few seconds on both sides and keep them aside.
Grease a pan with some oil / butter.
Now place a slightly cooked roti on the greased pan.
With a spoon spread some egg mixture on top of it.
Now place another slightly cooked roti on top immediately after spreading egg mixture so that they stick together.
Cook it well on both sides till it's done.
Cut it into four pieces and serve it with ketchup.
