Blue Velvet Mini Cakes | Mini Blue Velvet Cakes

Ingredients for Blue Velvet Mini Cakes 

  •  All-purpose flour 
  •  Cocoa powder 
  •  Salt 
  •  Baking powder 
  •  Eggs 
  •  White sugar 
  •  Vanilla extract 
  •  Blue food colour 
  •  Melted Butter 
  •  Milk 
  •  Cream cheese frosting









How to make Blue Velvet Mini Cakes - Step-by-step pictures 

 Line a cake tin with parchment paper and preheat the oven to 180°C. Sift together the flour, cocoa powder, baking powder and salt.
Mix well and set aside.
Take the egg whites and sugar in a wide bowl and beat with an electric hand mixer until foamy.
Gently mix in the egg yellow, vanilla extract and food colour.
Gently mix in the melted butter with a whisk.
Gradually add in the dry ingredients and milk.
Whisk gently until the mixture is smooth and free of lumps.
Pour the batter onto the prepared baking pan.Tap the pan several times to remove large air bubbles. Bake the cake at 180°C for 35 - 45 minutes.
Invert the cake onto a wire rack to cool completely.
Cut the cake with cookie cutters.
Pipe some cream cheese frosting between each layer of cake.
Decorate with sprinkles or fondant flowers.

The light brown sugar brings this cake a caramel-like flavour. Grated carrots and cinnamon make the cake moist and flavourful. 

The flavour of the cake is even better the day after baking it, so it is perfect for making ahead of time and it has a wonderful soft texture.

  •  Baking powder 
  •  Baking soda 
  •  Salt 
  •  Eggs 
  •  White sugar 
  •  Brown sugar 
  •  Melted Butter 
  •  Milk 
  •  grated Carrots 
  •  Cream Cheese Frosting

Chocolate snack cake | Easy Teatime Chocolate cake recipe

     
     This Chocolate Snack Cake is moist, tender, spongy, delicious and even better a day or two after baking! 


      This isn’t a cake to serve for a special occasion. 

      You could cut it into pieces and snack on it anytime. It always satisfies our sweet tooth.

 

      This snack cake is so good that icing is not necessary. 

      I like to top it simply with powdered sugar, but you could also spread a creamy chocolate frosting on top. 

      It's a perfect cake for late-night chocolate cravings. Keep a batch in the fridge at all times!

 


Chocolate Snack Cake Ingredients 

 All-purpose flour 
 Cocoa powder 
 Baking powder 
 Salt 
 Eggs 
 White sugar 
 Flavourless oil / Melted Butter 
 Vanilla extract 
 Milk

How to Make Chocolate snack cake - Step by Step Instructions 


 Line a loaf tin with parchment paper and preheat the oven to 180°C. Sift together the flour, cocoa powder, baking powder and salt.
Mix well and set aside.
Beat the eggs with an electric hand mixer until foamy for about 2 - 3 minutes.
Then add the sugar and continue beating for about 4 - 5 minutes.
Not whipping the egg mixture long enough will yield a dense cake.
Pour in the flavourless oil and vanilla extract.
Gradually add in the dry ingredients and milk.
Gently whisk the ingredients until the mixture is smooth and free of lumps.
Pour onto the prepared baking pan. Tap the pan several times to remove large air bubbles.
Bake the cake at 180°C for 30 - 35 minutes. Bake until a toothpick inserted in center comes out clean.
Carefully run a knife around the edges of the pan, invert the cake onto a wire rack to cool completely.
Sprinkle with powdered sugar.
