Instant noodle is one of the easy meals to rely on most days and it becomes boring if it's prepared in the same way every single time. It's quick to prepare and can be customized easily with a few simple additions. Eggs and veggies make the usual instant noodles more filling and tasty. It's one of my favorite ways of eating Maggi.
You can use veggies like carrot, bell pepper, sweet corn, mushroom, green peas, broccoli, and beans. Instead of egg, cooked chicken, beef or shrimp can also be used in this recipe.
For this recipe you can use any brand of instant noodles you like, I sometimes use ramen instead of Maggi. Cook the noodles separately and toss it with the veggies, scrambled eggs, and the tastemaker spice mix. I also use a little soy sauce but that is completely optional. You can scramble the eggs separately or do it in the same pan as I have shown below.

Egg Masala Maggi - Spicy and tasty instant maggi masala noodles loaded with eggs and veggies.
Ingredients
- 2 pack Maggi noodles
- Water as required
- 1 - 2 tbsp Oil
- 1 Onion (thinly sliced)
- 1/2 cup Carrot & Capsicum (thinly sliced)
- 1 tsp Soy sauce
- 2 Eggs

Bring water to boil and add the noodles. Cook as per the package instructions.
Drain the excess water from the noodles completely and heat some oil in a pan over medium heat.
Stir fry the sliced onion for 1 or 2 minutes and add the julienned veggies of choice.
Stir and saute for 2 minutes and add the Maggi tastemaker masala.
Pour the soya sauce and mix well.
Stick the veggies to one side of the pan and scramble the eggs on the other side.
Mix everything together and add the boiled noodles.
Stir well and serve hot!
