A flavorful puri recipe which is perfect for breakfast and dinner. The dough has mashed potatoes and few spices, which facilities in serving this dish without any accompaniments. This is one of my favorite north Indian recipes, the chopped coriander leaves and amchur makes it incredibly delicious!
This is perfect for lunch box. Instead of making puri and aloo curry separately, make this aloo masala puri and serve it hot with curd or pickle. These are so easy to make as the regular puris. Follow the step by step instructions and make it!
Deep fried flavorful Indian bread made with mashed potatoes and few regular Indian spices.
Ingredients
- 1 cup Whole wheat flour
- 1 Potato (boiled and grated) 1/2 cup approx.
- 1 tbsp. Coriander leaves (finely chopped)
- Salt as required
- 1/2 tsp Red chili powder
- 1 tsp Coriander powder
- 1/4 tsp of Turmeric powder
- 1/4 tsp Garam masala
- 1/2 tsp Dried mango powder (Amchur powder)
- 1/2 tsp Carom seeds (Ajwain)
- Water as required
- 3 to 4 tsp for Oil (for dough)
- Oil for deep-frying
Instructions
- Boil and grate 1 potato.
- Add it in a bowl along with 1 cup of whole wheat flour.
- Finely chop some coriander leaves and add it.
- Now add in all the spices like red chili powder, coriander powder, turmeric powder, garam masala, amchur powder, few carom seeds and finally some salt.
- Mix everything well and knead it to a soft dough by adding some water.
- Apply some oil on top of the dough and let it rest for 20 minutes.
- After 20 minutes, make small dough balls and roll them.
- Deep fry them in hot oil and serve them immediately.

Recipe notes
Puris won't puff up if you add more potatoes.
While frying always make sure that the oil is sufficiently hot and the dough is rolled out evenly.
Aloo ki puri recipe - Step by step pictures
In a wide bowl, add in the flour, grated potato, chopped coriander leaves, some salt and some red chili powder.
Now start adding all the remaining spices one by one. Corriander powder, turmeric powder, garam masala, dried mango powder and few carom seeds.
Mix well with hands and knead it to a soft dough by adding some water. Brush some oil on top of the dough and keep it covered for 20 minutes.
Now make small dough balls and start rolling them one by one with a rolling pin.
Fry them in hot oil.
Hot aloo puris are ready to serve!
