     Thenkuzhal murukku is the most popular south indian snack made during festive days, especially during festival of lights that is Diwali or Deepavali. You can't see any household in tamilnadu without this snack during Diwali.
     Thenkuzhal is the my most favorite murukku / chakli recipe out of all murukku / chakli recipes I have ever tasted. It's so easy to make at home without any fancy ingredients but it tastes really good. It always remembers me my childhood memories.


     Traditionally it is made using raw rice in larger quantities. Since it's made in larger quantities, we can't grind the soaked rice at home. People generally go to rice mills to grind the wet rice. If you can't find rice mill at your place, you can grind the rice flour at home in a mixer grinder, if you really want to make this recipe in the traditional way using raw rice. Else you can always use store bought rice flour.

Crispy and tasty homemade thenkuzhal murukku in traditional method.

Ingredients
  • 1/2 cup split black gram / urad dal
  • 2 cups raw rice
  • 1 or 2 tsp cumin seeds or sesame seeds
  • Salt as required
  • 2 to 3 tsp Butter
  • Water as required (to knead dough)
  • Oil (to deep fry)

Instructions

  1. Take urad dal in a pan and roast it on a medium flame for 1 or 2 minutes
  2. Grind the roasted urad dal in a mixer grinder and sieve the flour.
  3. Take 2 cups of raw rice in a bowl, wash it and soak it in water for 3 to 4 hours.
  4. Strain the water completely and grind the wet rice in mill or at home in a mixer jar.
  5. Grind it without adding water and sieve the ground rice flour two to three times.
  6. Take the rice flour in a wide bowl and add in the sieved urad dal flour.
  7. Add in the required amount of salt, some cumin / sesame seeds and some softened butter.
  8. Mix well with hands and knead it to a dough by adding some water.
  9. Take some dough in chakli maker with small holes plate.
  10. Fry murukku in hot oil.
  11. Let it cooldown for sometime and store it in an airtight container.

Thenkuzhal murukku using raw rice - Step by step pictures

In a pan, dry roast urad dal without colour change. Let it cooldown completely. Add it in a blender jar. Blend it well to a fine powder. Keep it aside.


In a wide bowl, add the raw rice(pacharisi). Wash the rice well with water and soak it for 3 - 4 hours.


Add it in a strainer and drain the water completely.


Now take it a big blender jar and powder it.


Sieve the powdered rice flour along with the powdered urad dal flour.


Now add in few cumin / sesame seeds, the required amount of salt and some softened butter.


Add in the required amount of water and knead it to a soft dough. Grease the chakli / muruku maker with the small holes plate.


Fry murukku in hot oil.
