Instant Kaju Burfi or Kaju Katli

Kaju katli or Kaju burfi is a popular Indian festive sweet recipe made with cashew nuts and it's made mainly during traditional Indian festivals like Diwali, Navratri and Holi. It's the most famous Indian sweet made using sugar syrup and it's usually made in an entirely different way but here I have come up with the recipe of instant kaju burfi or kaju katli, whatever you call it and it's basically called as an effortless way of making this recipe. These can also be called as no cook and no bake kaju burfi's and they taste scrumptious as the usual ones. It looks absolutely enchanting since I have made it with two layers with two different colors to make it much more appealing.
Although it's a simple instant kaju katli recipe, there are certain key steps which we need to follow to make this recipe enjoyable. You have to make sure whether the cashew nuts are powdered well since that impacts the texture of our sweet. It should have a nice smooth texture inside without any crushed cashews and if you make it that way it will absolutely melt in your mouth as the usual kaju katli.
In this instant kaju katli recipe I have used some milk powder and that actually helps in binding all the ingredients together and it adds a very good flavor. In one portion I have added rose essence instead of food color and that adds a unique flavor in one layer of kaju katli. Kaju katli is meant to be smoothly textured, thin and it's usually garnished with silver foil. Here I have used cashew nuts for garnishing, if you are using cashew nuts place it on top and press it gently. This instant kaju katli recipe is so simple and anybody can make it quickly. Instant Kaju Burfi
Preparation time : 5 minutes
Cooking time : 10 minutes
Serves : 8 - 10
INGREDIENTS
- CASHEW NUTS - 3/4 cup
- MILK POWDER - 1/4 cup
- POWDERED SUGAR - 3/4 cup
- FOOD COLOUR - 2 to 3 drops
- GHEE - 2 tsp
- WATER - 2 tbsp.
INSTRUCTIONS
- Add cashew nuts in a blender jar and blend it into a fine powder.
- In a mixing bowl, add in the cashew powder, milk powder, powdered sugar and ghee.
- Mix all these ingredients really well and add 2 tbsps. of water. Knead it into a dough, you can add some more water if required.
- Once the dough is ready, divide it into two equal portions since we are going to make it as two different layers.
- Add few drops of food color in one portion of dough and mix it up evenly.
- Now we got two portions of dough, one is colored and the other one is not colored.
- Take any one portion, place it on top of a greased butter paper and roll it with a rolling pin.
- Shape it with your hands by pressing it gently. It should have a smooth texture on top and it should be somewhat thin since we are gonna make it as two layers.
- Do the same thing with the other one and place it on top as the second layer.
- Start cutting it with a greased knife into a shape of your choice.
- After cutting them into individual pieces, garnish them with silver foil or with some nuts.
- It will take sometime to set and once it's all done our tasty instant kaju burfi's / kaju katli is ready to be enjoyed.
