Easy Coffee Cake with Chocolate ganache | How to make Coffee sponge cake
A delicious coffee sponge cake topped with a smooth chocolate ganache is always a crowd-pleaser. This Easy Coffee Cake is tender, moist, and chocolaty with its intense flavor and scrumptious taste.
Ingredients for Coffee sponge cake
- Hot Milk
- Coffee powder
- Eggs
- Powdered sugar
- Melted Butter
- Vanilla extract
- all-purpose flour
- Baking powder
- Baking Soda
- Salt
Chocolate Ganache
- Dark Chocolate
- Heavy cream
Line a cake tin with parchment paper and preheat the oven to 180°C.
Mix instant coffee powder with hot milk and set aside.
Take the eggs in a wide bowl and beat with an electric hand mixer until foamy.
Add in the powdered sugar.
Beat for about 3 - 4 minutes until the mixture triples in volume.
Add in the melted butter and vanilla extract.
Mix for a few seconds.
Sift together the flour, baking powder, baking soda and salt.
Gently whisk the ingredients.
Gradually add in the coffee.
Whisk gently until the mixture is smooth and free of lumps.
Pour the batter onto the prepared baking pan.
Tap the pan several times to remove large air bubbles.
Bake the cake at 180°C for 35 - 40 minutes.
Invert the cake onto a wire rack to cool completely.
For chocolate ganache microwave the chopped chocolate and cream for a few seconds.
Spread the ganache on top of the cake.
Decorate with grated white chocolate.
Slice and serve!
