Coconut Cake Loaf Ingredients
- Eggs
- Powdered sugar
- Vanilla extract
- Melted Butter
- All-purpose flour
- Baking powder
- Baking soda
- Salt
- Milk
- Desiccated coconut
Line a loaf tin with parchment paper and preheat the oven to 180°C. Take the eggs in a wide bowl and beat with an electric hand mixer until foamy.
Add in the powdered sugar.
Beat for about 3 - 4 minutes until the mixture triples in volume.
Add in the melted butter and vanilla extract.
Mix for a few seconds.
Sift together the flour, baking powder, baking soda and salt.
Gently whisk the ingredients.
Gradually add in the milk. Whisk gently until the mixture is smooth and free of lumps.
Gently fold in the desiccated coconut.
Pour the batter onto the prepared baking pan.
Tap the pan several times to remove large air bubbles.
Sprinkle some desiccated coconut on top.
Bake the cake at 180°C for 35 - 40 minutes. Bake until a toothpick inserted in the centre comes out clean.
Invert the cake onto a wire rack to cool completely.
Slice and serve!
