Jam cookies recipe | Jam Sandwich Cookies | Jam filled butter cookies


Perfectly crisp, butter-rich cookies filled with jam.
 


It is easy to put together these homemade Jam Sandwich Cookies. With a buttery shortbread base and warm jam centre, these cookies are a delectable treat for all of us! 

I used a medium size circular cookie cutter to cut out the cookies. To cut out the circular opening for the jam I used the back of a piping tip and a heart-shaped plunger cutter. 

You can use any flavour of fruit jam. Have them with a cup of cold milk.

 


Jam Sandwich Cookie Ingredients 

  •  Butter 
  •  Powdered sugar 
  •  Egg 
  •  Vanilla extract 
  •  All-purpose flour 
  •  preferred Jam



 








Jam Sandwich Cookies - Step by step pictures 


 Line a cookie tray with parchment paper and set it aside. Preheat the oven to 180°C.
Beat butter, vanilla extract and powdered sugar until fluffy in a large bowl, with an electric mixer.
Add in the egg and beat until combined.
Add flour in two batches and gently mix until combined.
Cover the dough in plastic wrap.
Refrigerate the dough until firm enough to roll.
Roll out the chilled dough on a floured surface. (1/4 inch thick )
Cut out cookies with a round cookie cutter.
Cut out centres with a piping tip or a heart-shaped plunger cutter.
Carefully transfer cookies to prepared baking sheets. Gather scraps and roll them out again to make more cookies.
Bake cookies for 10 to 12 minutes.
Let the cookies cool down completely before assembling.
Melt the jam in the microwave.
Spread the jam on the full cookies and place a cutout cookie overtop.
