Take ghee and cashew nuts in a wide microwave-safe bowl. Roast the cashew nuts in microwave on high power for 2 minutes. Remove the nuts in a small bowl and set aside. Add semolina in the same ghee. Mix well and roast semolina on microwave till it turns slight golden colour. Microwave on high power for 2 minutes. Gently mix it with a spatula. Pour in the hot water and mix well. Semolina bubbles and splutters after adding hot water, so be careful. Also add in the sugar and food colour. Stir well with a spatula without any lumps. Microwave on high power for 4 - 5 minutes. Mix once again gently. Add the remaining ghee, fried nuts and dry fruits. Garnish with cashew nuts and serve warm.
