Carrot sago kheer is a delightful, creamy, and thick Indian dessert made with tapioca and grated carrot. Tapioca gives it a unique soft bubbly texture and grated carrot gives it a nice orangish colour.

Carrot sago kheer - Step by step pictures
Soak sabudana in water for 30 minutes.
Heat ghee in a pan and saute the grated carrot for 2 - 3 minutes.
Take soaked sabudana in a saucepan with water. Cook on low flame for 5 to 6 minutes by constantly stirring in-between.
Add in the milk and let it boil.
Add sauteed carrots and sugar.
Give it a good mix.
Mix in the cardamom powder.
Fry nuts and dry fruits in ghee.
Mix everything together.
