The flavour of the cake is even better the day after baking it, so it is perfect for making ahead of time and it has a wonderful soft texture.
Carrot Cake Loaf Ingredients
- All-purpose flour
- ground cinnamon
- Baking powder
- Baking soda
- Salt
- Eggs
- White sugar
- Brown sugar
- Melted Butter
- Milk
- grated Carrots
- Cream Cheese Frosting
Line a loaf tin with parchment paper and preheat the oven to 180°C. Sift together the flour, ground cinnamon, baking powder, baking soda and salt.
Mix well and set aside.
Take the eggs, brown sugar and white sugar in another bowl.
Beat with an electric hand mixer until foamy for about 3 - 4 minutes.
Mix in the melted butter.
Gradually add in the dry ingredients and milk.
Gently whisk the ingredients until the mixture is smooth and free of lumps.
Gently fold in the grated carrot.
Pour onto the prepared baking pan. Tap the pan several times to remove large air bubbles.
Bake the cake at 180°C for 35 - 40 minutes. Bake until a toothpick inserted in the centre comes out clean.
Invert the cake onto a wire rack to cool completely.
Spread the cream cheese frosting on top. Garnish with sprinkles. Slice and serve!
