How to make Blue Velvet Mini Cakes - Step-by-step pictures
Line a cake tin with parchment paper and preheat the oven to 180°C. Sift together the flour, cocoa powder, baking powder and salt.
Mix well and set aside.
Take the egg whites and sugar in a wide bowl and beat with an electric hand mixer until foamy.
Gently mix in the egg yellow, vanilla extract and food colour.
Gently mix in the melted butter with a whisk.
Gradually add in the dry ingredients and milk.
Whisk gently until the mixture is smooth and free of lumps.
Pour the batter onto the prepared baking pan.Tap the pan several times to remove large air bubbles. Bake the cake at 180°C for 35 - 45 minutes.
Invert the cake onto a wire rack to cool completely.
Cut the cake with cookie cutters.
Pipe some cream cheese frosting between each layer of cake.
Decorate with sprinkles or fondant flowers.
