Easy Lemon Sponge Cake | Soft, moist and fluffy Lemon Snack Cake

A zesty lemon-flavoured dense, soft and moist cake is a perfect irresistible treat for any occasion.
This lemon snack cake has a soft pillowy texture with a delightful lemon flavour. Milk and lemon juice gives it an unbelievably light and tender crumb.
- Eggs
- Powdered Sugar
- Lemon zest
- Melted Butter
- All-purpose flour
- Baking powder
- Baking soda
- Salt
- Lemon juice
- Milk
Line a cake tin with parchment paper and preheat the oven to 180°C. Take the eggs in a wide bowl and beat with an electric hand mixer until foamy.
Add in the powdered sugar gradually.
Beat for about 3 - 4 minutes until the mixture triples in volume.
Add in the lemon zest and melted butter.
Mix for a few seconds.
Sift together the flour, baking powder, baking soda and salt.
Gently whisk the ingredients.
Pour in the lemon juice.
Gradually add in the milk.
Whisk gently until the mixture is smooth and free of lumps.
Pour the batter onto the prepared baking pan.
Bake the cake at 180°C for 35 - 40 minutes.
Invert the cake onto a wire rack to cool completely.
Slice and serve!
