Dates And Walnut Cake | Date Loaf Cake | Moist Date Cake



Bake this rich and nutritious date cake that brings together the sweetness of the dates with the nuttiness of the walnuts. 

This is probably one of the moist cakes I have ever baked!  It has a soft texture, and an intense date flavour makes it an incredible tea-time snack. 

 What’s not to love about a cake that’s so easy to make and very flavourful to eat! The taste of the cake gets even better the day after baking.



Ingredients for Date Loaf Cake 

  •  pitted dates 
  •  Milk 
  •  Eggs 
  •  Brown sugar 
  •  Vanilla extract 
  •  Melted Butter 
  •  All-purpose flour 
  •  Baking powder 
  •  Baking soda 
  •  Salt 
  •  chopped Walnuts

 









How to make Date Loaf Cake - Step-by-step pictures 


 Line a loaf tin with parchment paper and preheat the oven to 180°C.
Soak the dates in hot milk for 20 - 30 minutes.
Set aside to cool down completely.
Blend into a smooth paste.
Take the eggs in a wide bowl and beat with an electric hand mixer until foamy.
Add in the brown sugar.
Beat for about 3 - 4 minutes until the mixture triples in volume.
Add in the melted butter and vanilla extract.
Mix for a few seconds.
Sift together the flour, baking powder, baking soda and salt.
Gently whisk the ingredients.
Add in the date paste.
Whisk gently until the mixture is smooth and free of lumps.
Coat the walnuts with flour before adding.
Gently fold in the chopped walnuts.
Pour the batter onto the prepared baking pan.
Sprinkle some walnuts on top. Tap the pan several times to remove large air bubbles.
Bake the cake at 180°C for 35 - 40 minutes.
Invert the cake onto a wire rack to cool completely. Slice and serve!
