Ingredients for Jam Sponge Cake
- Eggs
- White sugar
- Vanilla extract
- Melted Butter
- all-purpose flour
- Baking powder
- Baking soda
- Salt
- Milk
- Any fruit jam
- chopped Nuts
Preheat the oven to 180°C. In a large bowl, beat the eggs until pale and foamy.
Add in the sugar and beat with an electric hand mixer until foamy for about 3 - 4 minutes.
Mix in the vanilla extract and melted butter.
Sieve together the all-purpose flour, baking powder, baking soda and salt.
Gradually add the dry ingredients and milk. Mix gently.
Stir until combined and smooth.
Line a cake tin with parchment paper and grease with melted butter.
Pour the batter into the prepared pan and tap the pan to release any air bubbles.
Bake the cake for 35 - 40 minutes, until a toothpick inserted in the centre comes out clean.
Then remove the cake from the pan and set it on a cooling rack to cool completely.
Trim the edges of the cake.
Melt the jam in the microwave and spread it on top of the cake with an offset spatula.
Sprinkle with chopped nuts.
Slice the cake into squares and serve!
