Moist, flavourful, crumbly and delicious classic Christmas fruit cake recipe made with lots of candied and dried fruits, that’s perfect for Christmas.
Here orange juice is used as a substitute for alcohol. Apple juice can also be used. You could also adjust the amounts of candied fruit and raisins. Fruit cakes take more time to bake, bake the cake in low temperature for a long time.
Christmas Fruit Cake - Step by step pictures
Chop dates and cherries into small pieces. Mix together the raisins, chopped nuts, and tutti frutti with chopped candied fruits. Pour in the orange juice. Let them soak for 2 - 3 hours. Strain the juice and set it aside. Cream together the butter and brown sugar. Whisk in the eggs one at a time and the vanilla extract. Sift all the dry ingredients together. Mix well slowly without any lumps. Gently fold in the soaked dry fruits. Pour the batter into a greased and lined baking tin. Garnish with more nuts on top. Bake in a preheated oven of 150°C for 50 - 60 minutes.
