Cutlet is a popular deep-fried Indian starter recipe, loved by people of all age groups. It's one of the delicious ways to include a variety of veggies in the diet. The finely chopped purple cabbage gives a unique aroma and taste in this recipe and in no way its similar to the taste of white cabbage. The perfect blend of all the spices, with a crispy texture outside, makes it a really interesting snack.

Purple Cabbage Cutlets - A quick and tasty Indian snack recipe using finely chopped purple cabbage, boiled potatoes and some spices.
Ingredients
- 2 boiled and peeled Potatoes
- 3/4 cup finely chopped Cabbage
- Salt as required
- 1 tsp Red chilli powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Cumin seeds
- 1 tsp Coriander powder
- 1/2 tsp Cumin powder
- 1/2 tsp Garam masala
- 1/2 tsp Ginger garlic paste
- 2 tbsp Gram flour
- 2 tbsp Bread crumbs
- Oil to shallow fry

Boil the potatoes and remove the peel. Chop the purple cabbage finely.
Place the boiled potatoes in a wide bowl.
Gently mash the potatoes with a masher or a wooden spatula.
Add in the finely chopped purple cabbage.
Mix in all the spices one by one.
Also, mix in the gram flour and bread crumbs.
Stir until everything is well combined.
Flatten the mixture into cutlets of desired shape and size.
Once the oil is hot, carefully shallow fry the cutlets on medium heat.
Flip carefully and fry the other side for a few more minutes until golden.
Cutlets can also be fried in less oil.
Serve hot with ketchup!
