Lassi is one of the popular Indian summer beverages. It's a thick, smooth, and creamy yogurt-based drink prepared in a lot of different flavors by churning homemade curd.
I usually try different flavors of lassi at home for my dad, he loves lassi a lot. That's how I came up with this recipe. I seriously have no idea how others make pineapple lassi, this is my style, this is how I make it. Pineapple essence is the most important ingredient in my pineapple lassi. It's easily available in most supermarkets, so please don't skip it. Trust me, a few drops of pineapple essence makes it super delicious!

Pineapple lassi recipe - A thick, creamy and tasty pineapple flavoured yogurt drink, which perfect to beat the summer heat.
Ingredients
- 1 & 1/2 cups peeled, chopped Pineapple
- 1/4 cup Milk
- 1 cup chilled Yogurt or thick Curd
- 1/8 tsp Pineapple essence
- Sugar as per taste

Blend chopped pineapple with milk in a blender jar.
Strain the juice.
Whisk the yogurt until creamy and smooth.
Take the whisked yogurt in a blender jar.
Pour in the strained juice.
Add sugar and pineapple essence.
Blend until smooth and frothy.
Serve chilled.
