With a handful of ingredients and with very little time, you have the easiest and tastiest way of eating hard-boiled eggs. Sliced egg pieces are dipped in besan bajji batter, deep-fried until golden, and can be served hot as a quick evening snack.
Once you know the recipe of the basic bajji batter it’s just a matter of experimenting! That's the fun part of making bajji's. The consistency of the batter is more important, it shouldn't be too thick or too runny.

Egg bajji - A quick and tasty evening snack made with hard boiled eggs.
Ingredients
- 5 boiled Eggs
- 1 cup Gram flour/ Besan
- 2 tbsp Rice flour
- 1 - 2 tsp kashmiri Red chilli powder
- 1/4 tsp Asafoetida
- 1/2 tsp Cumin powder
- 1/2 tsp Coriander powder
- 1/4 tsp Turmeric powder
- Salt as required
- A pinch of Baking soda
- 1/2 to 3/4 cup Water

Boil the eggs in enough water and remove the peel.
Cut the eggs into two halves horizontally or vertically as per your wish.
Place the gram flour and rice flour in a mixing bowl.
Add in all the spices like red chili powder, asafoetida, coriander powder, cumin powder, turmeric powder, the required amount of salt, and a pinch of baking soda.
Add water little by little and mix well.
Whisk until it becomes a smooth pouring consistency batter.
Dip the boiled egg pieces one by one in the batter.
Gently drop the pieces one by one in hot oil.
Fry them until golden on both sides.
Crispy egg bajji / pakora is ready to serve!
