   Vermicelli upma is a classic south Indian breakfast dish prepared with roasted vermicelli noodles and a few vegetables. It's something similar to the rava upma which is prepared using suji or semolina. Lemon juice can be a good addition to the usual vermicelli upma which makes it interestingly delicious with it's mild tangy taste. This can be served with any spicy chutney of choice.

Lemon vermicelli - A tangy and flavourful lemon vermicelli upma which is perfect for breakfast or dinner.

Ingredients
  • 2 - 3 tsp Oil
  • 1/2 tsp Mustard seeds
  • 1 or 2 Dried red chilies
  • 1 or 2 tbsp Peanuts
  • 1 tsp Chana dal
  • 1 tsp Urad dal
  • A few Curry leaves
  • 1/4 tsp grated Ginger
  • 1/4 tsp Asafoetida
  • 1/2 Onion (optional)
  • 1/2 tsp Turmeric powder
  • 1 & 1/2 cups Water
  • Salt as required
  • 1 cup Vermicelli
  • 3 - 4 tsp Lemon juice

Instructions

  • Heat oil in a pan and temper with mustard seeds, dried red chilies, peanuts, chana dal, urad dal, curry leaves, grated ginger, and asafoetida. Add the chopped onion and saute for a few minutes.

  • Sprinkle some turmeric powder and salt. Mix well.

  • Pour in the water and let it come to a boil.

  • Mix in the vermicelli and cook it covered till water is absorbed completely.
