Can’t decide between Vanilla and Chocolate Cake? Things are about to get awesome here. I have a recipe for a moist, tender, buttery and fluffy eggless marble cake.
You only need 1 batter for this marble cake recipe, which is the eggless vanilla cake batter. Half of it can be used to make the chocolate batter.
Alternate between vanilla and chocolate cake batter into the baking pan. Make a few swirls around the pan with a knife or an offset spatula. Create lines that are both horizontal and vertical. Make sure you’re swirling the batter throughout the layer, and not just on the top.
Eggless Marble Cake Ingredients
Milk & Vinegar (Buttermilk)
Hot water
Instant coffee powder
Cocoa powder
Butter
Powdered sugar
Vanilla extract
All-purpose flour
Baking powder
Baking soda
Salt
Buttermilk makes the cake super moist and fluffy.
And here’s how you can make this simple eggless marble cake.
For buttermilk mix milk with vinegar and set aside for 5 - 10 minutes.
Preheat the oven to 180°C and line a loaf tin with parchment paper. Take hot water in a glass and mix in the cocoa powder and instant coffee powder.
In a wide bowl, cream together the butter and sugar.
Add in the vanilla extract.
Sift together the all-purpose flour, baking powder, baking soda and salt.
Gradually add in the milk and mix gently with a whisk.
Mix until just combined. Do not overmix.
Divide the batter into two portions.
For the chocolate batter, pour the chocolate mixture into one portion.
Mix together until it's well combined.
In the cake tin, first, pour half of the vanilla batter.
Pour the chocolate batter on top.
Add the remaining vanilla batter on top.
Give it a marble effect with a knife.
Bake the cake at 180°C for 35 - 40 minutes.
Bake until a cake tester comes out clean.
Let it rest in the tin for 5 mins and cool it down on a wire rack.
Cut with a serrated knife. Store the cake in an airtight container.
